This book began as an idea so hazy that none of us on the team could quite grasp it, much less articulate it. But after speaking with the authors, working with the creative director, and meeting with the founding chef of restaurant Farina to learn about the people, the places, and the ingredients behind his dishes, I determined that respect should be the central theme of the book—and also the cornerstone of the growing Farina brand.
